In the first :60 of this clip, Paris food critic, Anton Ego (who by design resembles a vulture) is presented with an interpretation of Ratatouille. This clip was shown in the introduction to David Sobel, Professor, author, and Director of the Center for Place-Based Education at Antioch University New England, at the 2009 Farm-Based Education Conference to depict the transformative power of place-based education and in this case, the power of a muscle memory based on a food experienced as a child. One of the many truths of farm-based education is that people will not abandon that which sustains them when they are viscerally engaged in the system - early introduction to agriculture and farm-fresh food holds transformative power.
