Emily, thank you for posting this information and for hosting a great field trip!  Attached (below) is the Recipe for Mexican Sweet Potato and Black Bean Salad - so good I had to scan it!  This recipe is reprinted with permission from Raising the Salad Bar by Catherine Walthers, 2007, Lake Isle Press, Inc.
